Easy to Make Dairy Free Scones


If there's one thing I love making its scones - more often than not, all the ingredients are in your cupboard already, they take no time at all and they're delicious sweet or savoury! I make all my bakes in my Thermomix so I use a mixture of already programmed Thermomix recipes as well as my own favourites and adapt them to use in the machine. I also make everything dairy-free due to our son's dairy allergy which means there's been a lot of trial and error over the years. 

This particular scone recipe is based on a BBC Good Food recipe by Jane Hornby but I've tweaked the ingredient amounts and made it dairy-free so we can all enjoy them together at home.



What you'll need (makes 8):
400g self-raising flour
1tsp baking powder
90g Vitalite butter
3tbsp caster sugar
185ml oat milk
1tsp vanilla extract

Egg to glaze before baking
Jam and clotted cream to serve

Method:
  • Heat oven to 220c/Gas 7 and line trays with baking paper. Place self-raising flour into a large bowl followed by a pinch of salt and your baking powder then mix. If using a Thermomix do the same and mix for 20sec on speed 1.5
  • Add butter and rub in with fingers until the mixture resembles crumbs then add the caster sugar. For Thermomix add butter and caster sugar then mix for 30sec on speed 1.5
  • Warm oat milk in the microwave until warm and add vanilla extract
  • Take oat milk and combine with mixture quickly with a knife. In Thermomix add oat milk then mix for 30sec on speed 2
  • Cover the worktop in flour then empty the dough, work the dough a few times until smooth then take a rolling pin and roll out to 4cm before taking your cutter to cut out your scones
  • Brush top with beaten egg then place on a baking tray - bake for 12/15 minutes until golden
  • Once baked, leave to cool on a wire rack for 10 minutes 


As you can see, the recipe is super easy to create and pretty much fail-safe meaning you are left with deliciously perfect dairy-free scones every time.
